I believe those of Acts 1:11 were the last living human beings to see Jesus in his resurrected body that they saw Him leave the earth in. Jesus appeared several times to people after His resurrection but if we could ask what they saw they would not describe the same visual of those in Acts 1:11 had.
Perhaps some will disagree..

Not if they remember the first person to see Jesus after his resurrection, supposed that he was the gardener (John 20:15), even though she was well acquainted with him before his death. That's a good indication, his appearance was quite different then before his death. Lady Sower!

Paul's description after Jesus appeared to him on the Damacus road (Acts 9:1-8, 17), match this... 1 Timothy 2:17 NOW unto the King eternal, immortal, INVISIBLE, the only wise God, be honor and glory for ever and ever.
